For as long as we’ve known, Lebanon has always taken pride in its glorious cuisine.
The fusion of Mediterranean flavors, the Lebanese love for food, their creativity in enhancing recipes, and the variety of specialties of Lebanon’s regions make the Lebanese cuisine the most diverse and popular of all Middle Eastern cuisines. Or so we love to believe.
One thing for sure, photos of Lebanese food don’t even need to be photoshopped to look tempting. They’re simply too mouthwatering already as they are.

#Makdous (#Lebanese #EggplantPickle in oil), is among my favourite pickles. It's simple to make and, so, impressive on a plate. Every bite will draw that "umm" from your guests that will make all the work in preparing these worthwhile. Be sure to use fresh, firm and in season eggplants. . . . Ingredients (36 pieces) ? 36 small eggplants, Japanese or Italian, remove stems but leave the crown ? 2 1/2 cups walnuts, crushed ? 3 1/2 heads garlic, peeled and crushed ? Organic extra-virgin olive oil ? 2 hot red peppers, seeded and chopped fine ? 1/4 cup grey salt or non-iodized sea salt Immerse eggplants in a large pot of boiling water with a heavy plate on top of them to keep them under. When water begins to boil again, remove the eggplants and rinse in cold water until all heat is removed. Drain eggplants in a strainer for ten hours. Stuffing: Mix nuts, garlic, hot pepper, salt and 3 tbsps oil. Slit the sides of the eggplant and insert 1 tbsp of stuffing in each. Place in clean jars being sure that oil covers each of the eggplants completely.
